Breakfast is my favourite meal of the day. I almost always have a two-course breakfast and have this as my pudding. It feels very luxurious. If I don’t eat this after breakfast I will have it after lunch or my evening meal, although I don’t include the cacao nibs in the evening as I am very sensitive to theobromine in raw cacao, which is a mild stimulant.

I very rarely eat refined sugar these days as I find it too sweet. This has just the right amount of sweetness for my palate.

The beauty of this pudding is that I vary the fruit by the season. This is my late summer / Autumn version.

I also vary the nut butter.

Ingredients

  1. 1 fig
  2. 1 dessert spoon raspberries
  3. 1 dessert spoon blueberries
  4. 1 dessert spoon blackberries
  5. 1 small pear
  6. 1 dessert spoon organic raw cacao nibs
  7. 1 dessert spoon organic pecans broken into pieces
  8. 1 dessert spoon organic white tahini
  9. 1 dessert spoon organic almond butter

Directions

  1. Cut all fruit into small bite size pieces.
  2. Add berries.
  3. Sprinkle the cacao nibs and nuts.
  4. Add the tahini and nut butter.
  5. Enjoy!
